Did you have a good weekend? I had a good friend staying with us while she house hunted, we drove around, talked, and enjoyed some much needed girl time. I can't wait for them to move here! After she left, hubby and I took it easy at the beach.
While she was here I was so excited to make this, it was the perfect mix of comfortable yet sophisticated. We caught up over a bottle and a half of wine, this pizza and...then the dessert caught on fire.
In my attempt to be the hostess with the mostess I made a s'mores pie and was trying to give it a quick broil to toast the marshmallows. Literally less than a minute later I opened the oven door to find flames shooting out at me. "...it's on fire, ITS ON FIRE" The top was completely charred. We tried to salvage what we could...but decided to just finish the rest of the wine and watch the olympics. Not a bad compromise.
This pizza is everything I love about food. Sweet, fresh peaches, salty prosciutto, crunchy tangy onions, creamy mozzarella on a garlicky, olive oil crust. Life is good.
Peach & Prosciutto Pizza
1 ball pizza dough (we buy ours ready made at a bakery)
2 fresh, ripe, peaches, sliced
1 Tablespoon garlic
2 Tablespoons olive oil
3 slices white onion
1. Preheat your oven to 400 degrees F and put your pizza stone in to get hot.
2. On a clean, floured surface roll out your pizza dough. Mix together the olive oil and garlic. Brush it evenly on top of the dough like you would tomato sauce.
3. Arrange the peaches, onion, prosciutto, and mozzarella how you like on top. Drizzle a little more olive oil over the top.
4. Sprinkle a little cornmeal on the pizza stone and slide the pizza on. Bake for 18-20 minutes, until the crust is golden brown and cheese is melted. Enjoy!
